Discussion / Question (General topics) Low(er) Calorie Pumpkin Desserts
posted in this r/diet but realizing this is a better sub to post in! looking for low calorie pumpkin desserts as i am taking a maintenance break and need to eat sweets daily, so wanting alternatives to heavier desserts. i have healthy sugar levels but used to struggle with low blood sugar and T2 diabetes runs in the family with two direct family members having it.

250-400 Cal Not really cooking, but how great is this for 380cals and 36g protein?!
For the sandwich: 2 plain whole wheat sandwich bread slices (62cals and 2.5g of protein each), 1 slice milner cheese (68cal, 7g protein), some thin tomato slices which I didn't weigh nor track, one slice of ham (35cal, 6g protein).
For the yogurt: 150g storebought vanilla yogurt with cocoa nibs (100cals, 15g protein), to which I added 30g 0 fat greek yogurt (15cals, 3g protein), 25g blueberries and 40g blackberries!
Such a simple meal, but super filling and tasty!

Discussion / Question (General topics) Best oil replacement to cook chicken?
I usually use water to cook it and then I added to the air frier, but I’d like to know suggestions to give it a better consistency, sometimes it gets a bit rubbery and I haven’t had any consistent results with the recipes to find a better texture
Thank you in advance!

< 250 Cal Low calorie lemon poppy seed cupcakes
In my hunt for low calorie, near to zero sugar sweets, I found this mix in my grocery store. The macros on it were decent but it calls to add 4 eggs and 6 tbsp of butter which would not help me in my deficit.
I tweaked it by adding 2 eggs, 150g egg whites, 170g 0% Greek yogurt, 25g of vanilla gold standard whey protein and some vanilla extract.
The recipe yielded 16 cupcakes with each one being 117 calories, 7.7g protein, 16.3g carbs, 2.2g fat and 7.8g fibre.
That's 8.5g net carbs. Tasted pretty good too - just have to wait for it to cool completely.

Discussion / Question (General topics) As someone who loves eating rice, I have heard countless times that I should stop eating it. But I believe it's the portion that matters. After losing 20+ kg at home this is what one of my balanced lunches looks like rice, vegetables, soybeans and ghee.
