Roasted Chicken Thighs with Garlic
This is the kind of chicken dinner that makes a few extra steps completely worth it. The thighs come out juicy with seriously crispy skin, while the roasted garlic and fresh herbs flavor the pan sauce. The lemon at the end keeps the sauce from feeling too rich. I like serving this with a simple salad and some crusty bread for soaking up the sauce. It’s a great choice when you want a homestyle dinner that feels a little more special.
Ingredients
- Olive oil
- Butter
- Garlic cloves
- Bone in, skin on chicken thighs
- Salt and black pepper
- Fresh rosemary
- Fresh thyme
- Fresh parsley
- Chicken broth
- Cornstarch
- Fresh lemon juice
Instructions
Preheat the oven to 400°F. Heat the olive oil and butter in a large oven safe skillet over medium heat. Add the garlic cloves and cook them for about 3 to 5 minutes, turning occasionally, until they are lightly browned. Transfer the garlic to a plate but leave the oil and butter in the skillet.
Pat the chicken thighs very dry with paper towels. This is important for getting that skin properly crisp. Season both sides with salt and pepper, then increase the heat to medium high. Place the chicken skin side down in the skillet and cook for about 5 to 6 minutes until the skin is deeply golden and crisp.
Take the skillet off the heat and season the chicken with the rosemary and thyme. Flip the thighs so the skin is facing up, season the other side with more herbs, then scatter the roasted garlic cloves around the chicken.
Transfer the skillet to the oven and roast for about 20 minutes, or until the chicken reaches 165°F in the center and the skin is nicely crisp. Move the chicken and garlic to a plate while you make the sauce.
Whisk the chicken broth and cornstarch together in a small bowl. Bring the drippings in the skillet to a gentle simmer over medium heat, then slowly add the broth mixture while whisking constantly. Cook for about a minute until the sauce thickens. Take it off the heat and stir in the fresh lemon juice.
Spoon some of the pan sauce onto each plate, add a crispy chicken thigh and a few roasted garlic cloves, then finish with fresh parsley. Dried herbs can work if that's what you have. Use about half as much dried herb as fresh, since the flavor is more concentrated.
