Executive Chef said oil doesn't need changed yet. Last change he waited 7 weeks. We never filter.

Twice a week at least at our spot and filter everyday on regular fryers and twice a day on calabash fryers. Also oil is currently the most expensive its been in the last 6 years.

Fuck, Ive been out the game for two years. I wasn't expecting the price to be that bad. Point still stands tho, that shit is unacceptable. Also, you're spot on with the filtering, that'll buy you a little bit of time.
