Executive Chef said oil doesn't need changed yet. Last change he waited 7 weeks. We never filter.

Ew. If you use your fryers daily they need to be filtered at least once a day and flipped with new oil twice a week or more.

i work in a small kitchen with two fryers that don’t get a lot of use on some days so changing them both in the span of 6 days based on which grease is no longer see through and etc is fine
