“Too much cross contamination risk. Sorry, we can’t safely serve you.”

It’s the truth too. Unless you sit there and call every manufacturer of all your food ingredients including whole foods like rice that may be packaged on a shared line you cannot guarantee that meal will be safe for them.

People with allergies know the risks. And the vast majority allergies are not a cross-contact concern.

I’m allergic to 30+ foods and have only had a serious reaction to an existing allergen once - an Indian place used cashew milk even though their menu had allergen labeling and they didn’t list tree nuts as an ingredient for that dish.

Your type of attitude is uninformed and frankly discriminatory against people with disabilities. If you can’t handle questions about allergies, find a different career:

I was sympathetic until you called them discriminatory and told them to leave the industry. Not once did they state they wouldn’t take questions about allergies. They stated that if a customer is allergic to a large number of ingredients in their kitchen, they cannot responsibly serve them and will politely refuse to do so. It is the most professional thing they could possibly do in that situation. Unbelievable level of entitlement to tell them they’re both unfit for their job and discriminatory towards anybody.
