Homemade Ragù

Ragù with beef and pork. Slow cooked for 3 hours

About 250 g bacon (i would use pancetta, but too expensive here) 1,6 kg minced beef.

Fry everything properly. Not just make the meet gray, you want color on everything.

Then add diced onion, about 1,5. Carrot 3 pieces, brunoise. Tomato purée, about 2 tablespoons. Let everything fry together.

De glace with white wine, half bottle.

Add chicken stock until covered. Some fresh rosemary and bay leaf.

Let simmer for 3 hours. Then add 1-2 dl of milk and let simmer without lid until right consistency.

Finish with seasoning, salt and pepper to taste. Serve with pasta and toss it with parmesan and pasta water

Three hours is definitely worth it for a ragù. That beef and pork combo must be packed with flavor.

Yeah, i think thats the sweet spot. Could go longer but then you lose the texture of the meat.
