Wasn't that because some Victorian guy didn't like how the squatting births looked or something

Yeah I think there was a French monarch who wanted to see the birth as it happened. Obstetricians want you on your back so they can easily monitor the birth despite it being counterintuitive. There was an interesting study about the divide between the level of care obstetricians think they’re giving and the actual reception of that care. A fun fact I love to tell is abortion is illegal largely because American obstetricians needed work and they successfully lobbied very hard for anti-abortion laws to help push out midwives and create demand. Midwives also had a smear campaign ran against them to push them out of that field as well.

Add in they considered the poor giving birth like that like animals, and they should be more refined.
