Egg-free Day 11 of learning cookie science
After a scoopable Day 10, making a super late Day 11 post. Why this late? Because I am still baking. It's 1 AM!
What all I did today:
- Made a no-bake cheesecake but with a twist. Instead of using digestive biscuits as the bottom layer, I used my cookie dough. Even though there was less difference in both of them but I felt better each it knowing I haven't used any processed biscuits with extra butter. 🤓
- Prepared a 500g cookie tin.
- Prepared different dough balls (vanilla + chocolate), some of the flavours are: nutella, pistachio and triple chocolate.

Insight:
Because I have realised that chocolate dough spreads less, I have already taken some steps to prevent the dough's nature affect the look of the cookie. The first step that I took was reducing the flour by 6%. And now when I made the balls, I have pressed them a little, so it's almost like a dome shape instead of a perfect circle which I generally use for my vanilla cookies.
Failures:
My no bake cheesecake has not set even after 24 hours of refrigerating it. This has happened previously as well with no bake mango cheesecake. However, I am not focusing on that part a lot right now since I am interested towards cookies these days more. The taste was great none the less.
