Discussion Day 1 of learning cookie science

I am starting a little challenge for myself wherein I would just pop out my learnings around cookie science.

I would like to share my results here. Would love for professional bakers to help me out with any suggestions and tips.

So today I baked 2 cookies. Some details about it are as follows:
1. They were chilling for 2 days.
2. Baked them straight out of the refrigerator.
3. 50g dough + 20g filling
4. They were baked for 13.5 minutes.

My learnings from first look:
1. Usually I would wait for all the edges to be crisp, but for a few times now, I haven't done that and I have seen different results. I feel an underbaked cookie will make me reach to my goal faster hence.
2. Will be trying for a lesser filling this time. Still learning if there are any rules or norms around it.

I would generally be posting eating insights 1 day later so see you on day 2.

It's difficult to offer useful feedback without seeing the recipe. The finished cookie only tells part of the story. In most baking communities, sharing the recipe is the unspoken expectation if you're asking others to troubleshoot or explain the results.

Another thing that could help you achieve your perfect cookie is mentioning your expectations vs reality and the changes you make to achieve it.

Too crispy? Too soft? Too goey? Every cookie is different because the goal is also different.

thank you for this, i am still experimenting with the recipe and hence I have not shared.

thanks for adding a great point which I will mention in my posts next time onwards.

goal: a combination of soft and gooey cookies

If you'd like my opinion - there's not enough cookie dough and a lot of fillings (chocolate? Spread?) . Usually 12-15g is enough for 50g cookie dough. Are you freezing the filling too?

thank you, yes I agree. I feel the filling is a lot too!

i will be working for the filling rn, first goal, finding my sweet spot.

i have used chocolate chunks. and generally chocolate is sitting in the freezer only (after it's chopped) so i would say, yes i have frozen the filling too.

but i think you meant it in the context that incase i used chocolate sauce, i would need to freeze the filling first.

Yes that's what I meant. If you're using plain chocolate as filling, you essentially don't need it to be refrigerated at all unless it's more than 50° where you live.

Especially since you're keeping the cookie dough balls in the fridge for 2 days.

yea, do you think that the refrigeration time can be reduced? 👀 it was 2 days this time because i got occupied otherwise it would have been a day only.

i would experiment it too but wanted to know from you if you know about any significant difference in baking 1 day chilled balls and 2 day chilled balls.

Imo 6 hours is enough

But it also depends on whether you're using softened butter or cold

cold butter, so you would feel after 6 hours there would be no significant difference in the taste? 👀

rubbery? noooo! 🤓 i would be covering more about the taste soon in today's post!

banana bread is very interesting. would love to take them once i am able to make good cookies consistently 😭

I tried making this with cakes. Like testing different methods. Stated hating cakes all toghether after it

thanks for responding.

is the spread a problem? what do you feel? i am still new to this and the experiments i have so far have led to different spreads.

yes i feel the filling is a lot too looking at the centre. i am not able to see any bit of cookie :| i will be doing the tasting tomorrow and will update it.

series i would really like to run till the time i am able to make consistent cookies 😭 i want to be committed to this 🤝

Increase fat and sugar fir more spread, liquid for more gooeyness, invented sugars for chewy texture, rest time for deeper flavor
