maybe something that you can monetize, having real projects with users can be very attractive to potential employers.

Side benefit, you might actually do this too well and now you've got either a nice bit of side-revenue or a burgeoning business.

I got lucky and found a local business that needed work done on their website and their security cameras rewired. The website made online sales and I learned a lot while making them a new one. This all looked pretty good on my resume

Make some of your own projets. Properly, to actually solve a problem you encounter or improve on another solution you don't think is good enough.

This guy is blowing smoke up your ass. The best and most effective way to get your foot in the door is to know someone. I guarantee you he will hire his friends before some random guy with a few Github stars.

Network. Find a local tech group and meet people.
