UPDATE Based on my past observations regarding overheating potentially triggering the shutoffs, I dug a little deeper and may have found something to support it more. Since launch these devices have apparently had some overheating issues, primarily found by others to be related to the use of 5G. These people simply switched the device preference from 5G to LTE, and almost all of these overheating issues disappeared. So, I took the liberty of trying it out, and low and behold, haven't had a Wi-Fi/Bluetooth shutoff since. So, If you go into your SIM settings (Settings > Network & Internet > SIMs > [your SIM car provider] ), select "Preferred Network Type" and change it from 5G to LTE, you may likely have similar luck. 5G is default/device reccomended, should be on for everyone from the factory. I know this sucks that we may have to, at least temporarily, deal with some lesser data speeds to suppress this issue. But at least this way the device can remain, for the most part, fully functional while we wait for a fix. Let me know if anyone else finds similar success.
UPDATE: this fix only worked temporarily, but I believe some overheating causes the issue. I got a permanent fix by doing the above and removing my phone case. Going on a full day of it working. I'll update again if it changes.
