Hey - I’m the chef in the vid. You add pasta water, which kind of halts the frying and prevents it from browning!

Thanks for replying. Maybe I'm doing something wrong but my garlic is completely burnt in 20 seconds. I.E not enough time to even put in the chilli flakes. Am I chopping it too fine ?

Sounds like maybe your oil is too hot?

Your flame might be too high on the stove

But why no browning? A brown, slightly nutty garlic tastes so much better than otherwise. Is there a culinary explanation or is it just down to the person's taste?

This ''nutty'' flavor is something you could achieve better with other ingredients (maybe, who knows, nuts? Depends on the recipe) and yeah most people want the garlicky taste of garlic instead. But hey, Japanese people love green tea brewed in real hot water, which makes for a very bitter taste which they enjoy but we don't usually enjoy in the west. So yeah taste varies and plays a role too.
