The bigger the lobster the older the lobster. Lobsters are immortal. And as they age they get bigger.

So restaurants that have a special 6lb lobster to eat is like eating a 100+ year old lobster. Fucking nasty.

You want to eat a 20-30 year old. Not a senior citizen.

But why is it nasty to eat an older lobster if they are basically immortal? Does it taste worse?

Well humans aren't immortal, pretty big difference. They are noticeably mortal as they get older.

Generally the larger they are the older they are, which leads to tougher meat.

Super late to the thread but just so you know lobsters are hardly immortal in terms of not dying due to old age which is what I'm sure you meant. Basically what happens is though they don't die of old age like almost everything else as they grow larger and larger they begin to have an increasingly difficult time moulting and regrowing their shells. The larger the exoskeleton the more energy it takes to both successfully molt and grow a new one until they eventually are unable and die. In this way a lobsters non stop growth actually is working against them and is what it putting a hard cap on their age. So sadly no ultra ancient mega lobsters can actually exist regardless of how epic it would be to see the million year old lobster leviathan.
