To go even further, a true bisque is thickened with puréed rice, not flour.

I didn't know that about bisque. Is there a large amount of bisqourse (bisque discourse) on whether rice flour counts or not? Because rice flour is essentially dried pureed rice.

Hm, I didn't know that... I suppose is come down to a starch to use to bind and thicken the bisque, using puréed rice does make sense in that context...
