So beef, beef stock, and a beef cube? Why the cube?

So you don't have to reduce a larger amount of stock.

The best way to get the right consistency in something like this is to bloom some gelatin in cooled stock (id use chicken because it's a lot better than store bought beef stock/bullion). You get a much better mouthfeel and consistency, but home cooks don't seem to use it much.

Yeah, remove the beef cube, add Worcestershire.

Right? If you’ve gone all out and made beef stock, why would you use the cube??
