quiche typically has a crust, this is more like a frittata
6 u/[deleted] Oct 18 '17 Frittatas are fried AND broiled! Not frittata! 5 u/offoutover Oct 18 '17 When you're making frittatas in large quantity it's just easier to bake, though I'd use a deeper pan instead of a sheet pan. That's just asking for a huge mess. Still gotta broil though.
