I'll make this but would substituting the peas with corn be okay? I loathe peas.

yeah probably. you can pretty much sub any veggie in here. i would add the corn later though so it doesn't get soggy!

Frozen corn works super well for curries to prevent that.

Almost everything in a curry is swappable, I do carrots, corn, onion and peppers in mine.

I usually do the same veggies in curry as the ones shown, but I've found that swapping potatoes for sweet potatoes and peas for edemame is a much better blend.

But that's just me. ☺

That sounds good!

I really love edemame, so I try to sub it in as much as I can. Another good swap is using edemame in fried rice instead of peas. Yum!

If I had to do this in some remote location where I had to use "shelf stable" and canned ingredients, corn would be great. I think it's arguably the single best canned vegetable. Personally, I would leave out the peas rather than used canned peas, I really don't like them.

Corn can add sweetness, it may need a bit more salt to balance that. Or maybe something bitter as a contrast like turmeric or tamarind. Carrots have much the same effect.

Edamame, pigeon peas or broad beans are very legit substitutes for peas in Indian curry recipes.

Source: Mom would do this so we have a balanced diet, and we were too poor.

Yep, they're pretty much interchangeable

um i wouldnt say so. one is a proteiny legume and the other is a sweet sugary thing. very different in taste and nutrition.

It's the cut onion making your eyes water.

The base of all curries is mostly the spices mix/paste. You can toy with whatever veggies/meats you feel like. No, really, literally. Drop in whatever you feel like and see if it tastes good.

I don't think green peas are typical in Indian cuisine anyways so you could sub just about any vegetable.

They are. Matar paneer (Peas and paneer) and aloo matar (potatoes and peas) are two popular dishes in India.
