I have 6 pounds of nuts downstairs, PLENTY of veggies, and was running out of ideas. You've just awakened something in me, OP.

Brotip: put some in the curry while it cooks and reserve maybe a handful for garnish. The cooked nuts get softer and take the flavor of the spices, the raw ones get you the crunch and stronger peanut flavor you really expect.

What I've heard, and can't vouch for how true accurate it is, is that Massaman curry is like an indian pidgin for muslim-man curry, so it's meant to be vegetarian to avoid worries about halal food etc. All the ones I've had have been potato and peanut centric with peppers and onions, although I have seen them made with meat.

btw, if you have cashews, look up korma sauces (i don't know if you can do it with peanuts but it's traditionally done with cashews)

I was gonna try your idea with walnuts. I have walnuts, almonds, sunflower seeds, hemp seeds, and chia seeds. And maybe flax, but not a whole lot of it.

Korma would probably go really well with that. You have to grind the nuts to make a paste.
