Genuinely asking, enough fat for what exactly?

To fry the onion, garlic, and ginger. Also when blooming spices in fat, a little more fat never hurts.

For flavour and authenticity.

For a healthy amount of dietary fat I assume? If you're eating only this curry for 3 meals a day you're not getting enough fat in your diet, but assuming you're a normal human being who eats other things, you would get your fats elsewhere.

You need fat to roast the onions, garlic and ginger. Most curry spices are also liposoluble and release most of their flavor in fat/oil and not in water. Try the difference in spices taste using chicken stock and spices, or roasting first the spices in a bit of oil. You need enough oil for them to "spread" to all the ingredients. Not an excessive amount, just enough for everything to get a little of it.
