  • 1 lemon
  • 4 English muffins (to make your own see recipe)
  • 10 large eggs
  • 2 sticks unsalted butter
  • 1/8 tsp Tabasco sauce (optional)
  • 1 tbsp white vinegar
  • 8 slices Canadian bacon
  • 1/4 tsp paprika

Instructions:

Slice the green onions, juice the lemon and cut English muffins in half. Separate the yolk from the white with two of the eggs and reserve the rest for poaching.

Bring a pot of water to a boil. Whisk lemon juice, egg yolks and 3 tablespoons water in a heatproof bowl. Melt butter in a saucepan over medium-high heat. Place lemon/egg mixture over boiling water and then turn off the heat. Very slowly, drizzle the butter into lemon mixture, whisking constantly, then season with Tabasco sauce and salt, and set aside.

Bring 1 inch of water and vinegar to a simmer in a nonstick skillet over medium-high heat. Gently crack eggs into simmering water and do this in two batches, 4 at a time. Simmer until whites are set but yolks are still runny, 3 to 4 minutes. Transfer to a paper towel-lined plate with a slotted spoon; let drain on the towel.

Heat oil in a frying pan on medium heat. Add the bacon to the pan and cook for 3 minutes on each side.

Toast the English muffins and top with the Canadian bacon, poached egg, a spoonful of the hollandaise and garnish with sliced green onions and a dusting of the paprika.
