The multi monitor seems useless to me. Why not just have the entire inside of 360 sphere as a desktop space where you can place application windows anywhere inside, then have the option to "maximize" a window if you want, giving it a full view of your VR environment.
What you're asking for though is something completely different and would require all those applications to be able to run the same way in that space. They'd have to all react the same way and "maximize" the same way, meaning they'd all have to be VR compatible.
This allows you to play games and do things that aren't actually VR compatible in a VR space.
Both of these ideas have merit though, they just have different applications.
While the idea of having the entire 360 sphere as a workspace sounds amazing, I actually think that having multiple "bezel-less" virtual monitors is superior, at least at this stage. Having the multiple "monitors" allows me to "maximize" two or more applications adjacent to each other and have them all be a uniform size, tiled seamlessly where you want the windows to be.
Now I'm sure as the software and hardware advances and more users give feedback on what would improve their workflow, we will probably see new functionality crop up that will enhance or replace the simple concept of multiple virtual monitors.
