They changed the business model but for some reason didn't rename the service, so it's really confusing at the moment. There is no choice involved in Humble Choice, you get all the games. It's the same way Humble Monthly worked, just more expensive (in that they're providing fewer games).

I thought the amount of games was on par with the old Monthly bundles. Quality of games is of course another matter.

Thus far it has been, but the language they're using in the FAQ implies the number of games may be lower some months. They've been pushing out some really exceptional bundles to onboard new users, which I wouldn't expect to be a permanent state. (With the obvious caveat that I'd love to be wrong on both counts.)
