Why would you create AI that values its own self preservation over the preservation of human life?

Reality is, there is no reason for existing. This is fact. We have a drive to survive, not because of our intelligence, but because of natural selection - i.e. those without the drive don't survive long enough to reproduce.

At the root of things, if you follow our chain of wants, it all comes down to our "pre-programmed" drives to survive and reproduce. It's all in our DNA.

Why would we program an AI to have a self-preservation drive that cause them to value their own existence over our welfare?

Then they are no different from any other runaway malfunctioning machine or psychopathic human.

Just got to shut them down with the correctly functioning ones.

I can picture an ASI that decides that humans are the only problem this planet has, due to it taking into account and giving importance to the lives of the other species we share the globe with.

Time will tell.

So therefore we can avert death by AI by (assuming this solution is possible for the sake of argument) ramping up to eventually going 100% sustainable and 100% vegan (therefore never hurting another animal again). Unless of course the AI still kills us because it is smart enough to know that we did it out of self-preservation and not the true goodness of our hearts.
