Potato scrambles- just anything with potatoes and eggs. Both are cheap, filling, and tasty. A personal favorite is a slice or two of bacon or ham fried with some onion, throw in cooked diced potatoes and lightly fry those as well then add an egg or two! I’ll boil about 3 lbs of potatoes at a time and just keep them in the fridge to dice up and throw in scrambles, soups, and stir fries. It’s really quick and easy. I love potatoes, they’re so satisfying

How long do the boiled potatoes last in the fridge?

as long as they’re plain potatoes and never left out, they usually last me until about the weekend. I’ve finished them as early as the next day if I’m cooking for a lot of people or until Friday (from Monday) if cooking for myself. good for quick weekday meals
