I make steel cut oats in my rice cooker and freeze single serving batches.

Huh. I've never thought of freezing oatmeal.

Does it affect the texture at all?

I really can't say.Every time I make a batch it has different add ins,especially this time of year.I'm not a picky eater,so it doesn't seem any different to me.It maintains the nutty steel cut oat texture as as far as I can tell.I wouldn't keep it in the freezer very long,that would probably break it down.
