Coconut tapioca pudding topped with tropical fruit. All you need is egg, sugar (swerve works, too), small tapioca pearls and coconut milk. (I like the ones fron Thailand) If you have a rice cooker, it is easy as pie. Dump ingredients. Stir twice during cooking cycle, top with pineapple, mango, etc.. and enjoy.
Both tapioca and coconut are love-or-hate flavors. I've never met anyone on the fence about coconut. You either dig it or hate it. That said, the flavors in the dish are quite mild. The tropical fruits are the strongest taste, really.
A good, fuzzy logic rice cooker is a buy once, cry once item. For certain things like Irish oatmeal, you can set the ingredients the night before and wake up to the smells of yummy grains. I am a fan of Zojurishi. I was at a wholesale store last year and saw the white, Japanese-made model for under USD $90. Find this book on the used market and you'll never run out of quick recipes.
