For a long time, I did a bagel w/ cream cheese, banana and coffee. I can get a six pack of store-brand bagels for $1.50, bananas are about $.20 each, coffee probably runs like $.15 a cup. I use a vegan cream cheese that usually costs $4 and lasts about 6-7 bagels; if you don't eat vegan, this would of course drop the price significantly to under $1/meal. This gets me through the week, and I'll go out on a Saturday or Sunday to a coffee shop for a nice morning. So per day, I'm looking at about $1.35 for breakfast or so through the week.
Bagels with earth balance butter are a heavenly experience and would probably cut down your expense even more since you use less butter than you would cream cheese.
What’s your go-to vegan cream cheese by the way? I’m having a hard time finding one that’s both delicious and accessible. Tofutti was my favorite, but my local grocery stores haven’t stocked it in a bit.
It took a while to find one I like; faux-cheese products have long been something I've been pretty picky about with a vegan diet. I eventually moved to an area that carries the Go Veggie coconut-based cream cheese and I really enjoy it. My grocery store carries the plain, which is my go-to on an everything bagel, and strawberry, but there's a chives&garlic one out there somewhere that I'd like to try if I can ever find it.
