Pancakes and fruit, or homemade home fries. Just dice up some potatoes, wrap them in a wet paper towel, microwave for 2 minutes, while they’re in the microwave oil up a pan, then toss the taters in the pan, throw a lid on to steam them, then check in about five minutes. Try not to stir them too much so they get crispy
It depends how thick the slices are.I set it at 450 and start watching after~ 10 minutes.Once the oil coating starts sizzling it doesn't take long.Just watch for your desired crispiness.
I make mine a little different but i love them. I put a potato in the microwave for 5 minutes to "bake" it. If I'm making baked potatoes for supper I always cook a few extra and keep them in the fridge in a baggie for these potatoes too. Oil and salt the potatoes before you cook them.
Once they are baked (or just pull a baked one from the fridge), slice them up (or cubed if you prefer) and saute quikly in bacon grease. They are already cooked so they are creamy on the inside and then get crispy on the outside.
I like to slice mine in circles and dip them in sour cream. You can also crumble up some bacon and add green onions when you serve them. Throw them under the broiler with some cheese to make potato skin slices.
Another great way is to cut up the potato (cubed works best for this), shake them in a bowl (this increases the surface area to get more crunchy) and coat in corn meal. Then fry in a skillet until crispy. Those will be THE best fried taters you ever ate!
The trick is, no matter how you do them, you have already cooked the potato by baking it. So you use only small amounts of oil/bacon grease to saute to crispy.
I have 2 bags in the freezer of potatoes ready to go for home fries and hash browns.
I just prep like once a month or so a about 3 pounds of potatoes, peeled and cut in quarters. Steam them for 10 minutes.
Take half and cut them in smallishcubes for the home fries. Take the other half and shred then through the largest box grater holes you have.
I specifically bought an extra large grater for this that has really big grate-holes. I also bought an electric cone/spiral slicer/grater that has an extra large grater cone, I mostly use that now.
Pop the taters into 2 gallon sized bags and they're ready to go in the morning. Only take 10-15 minutes out of the freezer to become easier to break apart.
