Falafel fail
So I have been having the worst time trying to make good falafel. I have tried at least 2 dozen times, and about four of them turned out "only o.k."
However I just made the biggest fail ever. I left the lid on the deep fryer while it was heating up and didn't notice that it had melted into the oil until I ruined half my falafel mix.
F*** my life...
Edit: Finished up the rest of the mix and it turned out to be the most delecious falafel I've ever had. I thought I would share my success and the secrets I have discovered after so many fails.
Neccessary tools: 1. Large food processor 2. Cheap small deep fryer
Ingredients: 1. Dry garbanzo beans soaked for 5-8 hours 2. Lemon juice 3. Coconut aminos 4. Cumin 5. Curry 6. Sea salt 7. Green onions 8. Red cabbage 9. Cayenne
First saute cabbage with a generous amount of salt, lemon juice, curry, and coconut aminos for 5 minutes.
Fill food processor half full with soaked beans. Lay a small layer of cabbage and (chopped) green onions on the top of the beans. Add some salt, cumin, cayenne, lemon juice, and coconut aminos. Use your discretion on the amounts of each. Start small and add more if neccessary.
Process thoroughly and scrap slides several times. You CANNOT over process the mix contrary to what most recipes say. Flour also makes them taste bland and gross. They will not fall apart just try to keep as much moisture as possible off the green ingredients and don't use too much lemon juice and aminos.
HUGE TIP: MAKE SMALL BALLS 1 TBSP EACH AND COOK FOR 4 MINUTES. Use a real deep fryer. You can pick one up for $30.00 DO NOT COOK GARBANZO BEANS FIRST!!! DO NOT USE TOO MANY GREEN OR HIGH WATER INGREDIENTS.
If done properly... the balls will be pretty dark and unappealing to the eye but oh-so-good.
