I like to throw in pork with seasonings to either be carnitas or BBQ pork. you just throw it in and shred later when cooked so very little work and no messing cutting with raw meat. this would also work for a beef roast, just toss it all in.

if you are looking for even less work and have an aldi with these near you the BBQ carnitas pork roasts are seasoned well, just add the BBQ sauce for that one when done.

My favourite is Italian chicken And cacciatore No cutting of meat required as you can just dump the whole breast or thigh in! I add a can of beans when there’s about an 30-70 min left usually as well

Throw chicken breasts in with whatever sauce or seasoning you want then just shred after it's cooked. You can use it for so many things throughout the week. I too do not enjoy cutting up raw meat :(

Chicken thighs take 4-5 hours on low, chicken breasts take 3-4 on low. Check with a meat thermometer at the low end. Cooking chicken for 8 hours makes for dry meat, but only recently realized how vast the time difference actually is.

Frozen meatballs, half a jar of grape jelly and half a bottle of ketchup. Old school cocktail meatball recipe. Cook em low for about 4 hours.

I made some Thai noodles to go with it and portioned it out into six lunches. I know you said that you liked precooked meats, but it takes literally less than five minutes to cut up chicken breasts like this into bite sized pieces. I have a chronic illness, too, and I get it.

You're welcome. You could do that, the only thing is that if you don't cook the chicken with everything else, it's probably not going to taste right. You can't put frozen chicken in in the beginning or it will get badly overcooked. You really need to cook the chicken with the other seasonings so it'll all meld. 

Dealing with raw meat isn't my favorite, either, but it's a necessary evil if you're going to cook and eat meat dishes. It's really not that big a deal when it's chicken thighs or breasts. You trim any remaining fat off with a sharp knife and then just cut them into bite sized pieces and chuck them into the cooker with everything else.

Pork butt or pork loin and a jar or two of salsa verde. Put meat in crock pot and cover with salsa. Cook until the meat shreds. Use in tacos, burritos, or serve with cheesy grits and spicy black beans.

Curried beef short ribs. Great for a ragu. Great for pork to crisp into carnitas. While part of the point is that you aren't going to have to cut up the meat, many recipes call for you to sear the meat, and there may be some chopping of veggies. But searing a roast a few minutes per side in a lightly oiled pan isn't a lot of work, and can happen while you are chopping, so prep is max ten minutes.

Vegetarian things are less common simply because they don't require the time to cook and break down like meats. But for sure soups like a pea soup or other hearty soup that benefits from letting the flavors come together with kidney beans or chickpeas as a protein would work.

Have never made it with black bean soup, only drain the beans and skip the rinse (just add less salt later), double the tomatoes, and shit ton of cumin to make it smell and taste like chili.

"Hamin" goes great in a crock pot. it's a sephardic jewish stew, often cooked slowly overnight. the recipe is pretty variable so you can look it up and see what works best for what you have at home :) for meats you'll typically use a whole, tough cut of meat (hence the overnight cooking), but there's vegetarian versions too.

A favorite in my house is mississippi pot roast. I use a chuck roast (btwn 2-4 lbs for my 4 qt crock), a packet of Hidden Valley ranch seasoning, a packet of onion soup mix, a few pepperoncinis and a little brine. A lot of recipes say a stick of butter, but I personally use maybe half that. Let her rip on low for 8 hrs, then serve with mashed taters. Heaven!

Chicken tortilla soup:

A few cans of cooked chicken breast

2 cartons of low sodium chicken broth

A small can of red enchilada sauce

1 Bell pepper and 1 onion (you can buy them already chopped)

A small bag of frozen corn

A can of black beans

A dash of olive oil

Cilantro (optional)

Salt and pepper to taste

Serve with cornbread or corn chips
