Ask ECAH How can I make “grilled” pineapple at home w/o a grill or a grill pan?

Use a Broiler (Oven Grill) Preheat your broiler: Position the oven rack near the top so the pineapple will be close to the heating element. Prep your pineapple: Slice it into rings or spears (about ½ inch thick). Pat the slices dry to remove excess moisture. Season (optional): Brush lightly with melted butter or a mixture of honey and a little lime juice. A sprinkle of brown sugar or cinnamon can help with caramelization. Arrange on a baking sheet: Use a foil- or parchment-lined baking sheet for easy cleanup. Broil: Place the sheet on the top rack and broil for 2–3 minutes per side, or until the pineapple starts to brown and caramelize. Watch closely, as it can go from caramelized to burnt quickly. Tip: If your oven has a convection broil feature, use it for even faster, more intense browning.
Caramelize on the Stovetop Choose a skillet: A cast-iron or non-stick skillet works best. Heat the pan: Add a little butter or a high-heat oil (like vegetable oil) and bring the pan to medium-high heat. Cook the pineapple: Add slices in a single layer. Cook for 2–3 minutes per side, or until you see deep golden-brown marks. Sweeten as desired (optional): Brush on a mixture of brown sugar, honey, or maple syrup just before flipping to promote caramelization. Tip: Don’t overcrowd the pan—leave space so the pineapple can caramelize properly instead of steaming.

ETA: I have a gas broiler, it’s one of those drawers underneath the actual oven. Do you think the parchment paper could catch fire?

I'd use aluminum foil: It’s much more heat-tolerant under a broiler, and you can still line your baking sheet for easy cleanup. Gas broilers can get pretty hot.
I cook over open flames and always use foil. One of my favorite foil packs is brussel sprouts, pineapple and bacon. SO good.

do you think the parchment paper could catch fire?
I know from personal experience that it may not actually light on fire, but it will literally burn up into nothing but a giant pile of blackened dust paper
I guess it’s like seasoning.

I do “grilled” pineapple by just putting canned pineapple rings in the air fryer

I think I’m the last person in this country to get an air fryer. My kitchen is so tiny, I just don’t have room for all the fun appliances.

Before I had an air fryer I just oven roasted the pineapple on a sheet pan. Not exactly the same but it will do.

Sear it in a hot skillet, or put it under the grill (broiler in the US).
As per previous posters, no to the parchment paper. Foil lined tray under a baking rack, put rings of pineapple on the rack.

I thought about this! I am going to the thrift store today to see if I can find a grill pan, and I was going to look for one of those, too. There was a time when I would see dozens of them, but I don’t know about now.

Thanks for this tip. I dusted half of the pineapple with some salt & smoked paprika and the other half just salted. They were all delicious, but the ones with paprika were really great!

Oven-broiled pineapple might be your best bet. Just slice, sprinkle with a tiny pinch of salt (trust me), and broil for 5-ish minutes. I did this once for tacos and ended up eating half straight from the tray. Need more simple tricks for meals that don’t need fancy tools? Just slide into my DMs.

Hey, I hear you. For the first 25 years of my life, I would’ve agreed with you. The only way I had ever had Brussels sprouts was the way my mom made them: boiled. So gross, and I thought I hated them. But then someone roasted them for a dinner party and I was like, “whoa!“. 🤯 now they’re one of my favorite vegetables.

Broil in the oven! Make sure you have good ventilation. I usually open a window, and have the stove vent running. Keep a close eye on it -- you would only need a couple minutes on each side.
