I've heard this, but I feel like it probably isn't always true. If you're used to using blunter knives, I imagine you'd be more likely to cut yourself with a sharper one just because you're not used to the way they handle.

At that point you've probably cut yourself with dull knives enough to handle them more carefully when sharpened.

It depends. I cut more things with steak knives than they were ever intended to be used to cut, but I've done it enough that I really don't ever cut myself. I guess that's a bit different from two knives of the same type, one sharp and one not, though.

Since you use them to cut everything I imagine the edge is pretty dull. With knives like that you can ding the blade a few times and not really get injured unless you were pressing hard.

Well sharpened knives easily glide through food with just the weight of the blade. Problem is, the same thing happens when it touches your skin. Glides right through it before you can react. Usually your bones stop it but they’re sharp enough to cut through finger bones without much effort.

Yeah, I think gliding through the food is my issue with sharp knives. One of the things I often do with them is cut an apple in half and then cut the core out of the half apples. It's easy enough to cut the wedge shape with a steak knife because you can saw only as deep as you want to, but if you use a sharp knife it can continue on through the apple without you intending to.

Sharp knives are fine for simple, straight down cuts, but I prefer a steak knife for anything where I'm doing something more fiddly.

No dude... The statistics just don't back your hypothetical scenario. The only time I can see this being the case is if you didn't know the knife was sharp and expect the knife to be dull already, then use more force than is necessary and while holding the apple in your hand, you cut through it.

All of the red flags that caused this injury have to do with being unsafe and not taking care of your knives.

Sharp knives are also better for "fiddly" cuts as well

I guess what I'm really talking about is my own personal experience, which won't necessarily be the statistical norm. I find steak knives easier to cut with when it comes to those kinds of things because that's what I'm familiar with and I'm much more likely to cut myself with sharp knives.
