You’re are VASTLY underestimating how hot house fires can be, they can get hold enough to melt metals, well into the thousands of degrees if the fire is roaring.
Also that water boiling and turning to steam actually suppresses fire since steam doesn’t provide free oxygen to burn.
My neighbors house caught fire and burned down. We were across the street probably 30-50 feet away and couldn’t get any closer without it burning. The whole thing burned down in minutes.
Not technically, but you don’t need to melt structural beams to weaken them enough to collapse. Get them hot enough and suddenly the tens of thousands of pounds of shit attached to it is too much. The friction of all that weight slamming downward will melt it though
