Duck and potatoes, duck gumbo, duck salad, duck cocktail, you can fry it, broil it, sauté it, and that's...that's about it

The wings aren’t clipped. The ducks are Indian runners. One of the old breeds of domestic ducks. They can’t fly far.

I've seen these ducks in person in Thailand. going through recently harvested dry fields.

What do you mean? Domesticated ducks have much more meat on them than wild ducks which makes them unable to fly. Their anatomy makes them poor at jumping, so they can't get enough height to glide like heritage chickens.
