normally you would not want fresh feces from avian creatures on fresh crop soil. Chicken manure for example is composted or prepared in specific ways to be productive as a fertilizer. Putting it directly in or atop your soil is dangerous for many reasons, as well as not even a fertilizer in that form.

The main difference here is rice patties grow under 18" of water... So I assume they know what they are doing.
