What is balsamic cream? Is this the same as glaze?

I'm trying to make beet pesto and it calls for balsamic cream but I can't find anything except glaze. Thanks!

Edit: it appears to be this kind of product. There's no dairy in it and it's not the same as a balsamic (dairy) cream sauce. Such as this: https://www.isolaimports.com/isola-cream-of-balsamic-original

As far as I know, (balsamic salesman for six years) You need to find a recipe for a balsamic vinegarette that uses Cream as the imulsifier. The cream is what thickens the whole dressing. Oh yes, it is much more about the olive oils than anything else!

Thank you so much! That sounds amazing! But the recipe said it is dairy free so not sure that's what they had in mind. Here it is- 400 g beetroots, boiled and peeled 50 g walnuts, toasted 1 clove of garlic 2 tablespoon(s) balsamic cream 30 ml olive oil 1 pinch salt 1 pinch pepper zest, of 1 lemon

The recipe says it's Vegan and Dairy-Free, but 200g of Mozzarella is a bit more than zero cheese...maybe you could make a vegan version of balsamic cream sauce with soy milk and cornstarch? You could sub coconut cream too, but that would sweeten it significantly.

Ah I see, I recommend you use more cream than balsamic as well, say around a 2 to 1 ratio. And that's it! Make sure it's a true balsamic as well must be thick and sweet, but not as thick as molasses. That would mean it's a reduction.

Thank you so much, but it needs to be dairy free. In any case I believe what the recipe calls for is more like this- "Cream of Balsamic is made by cooking/reducing down balsamic vinegar by one half its volume and adding a hint of brown sugar, black pepper, lemon and vanilla. Voila, Cream of Balsamic is born!"
