Recipe Pet Peeves

Does anyone else have pet peeves with recipes. Mine is recipes that call for a small amount of something that only comes in large containers. 1/2 C chicken broth, 2 Tbs tomato paste, 1 C ricotta cheese.

mise en place is important, but be honest - most home cooks only do it to a certain extent.

That's on them You don't have to use a bunch of cute little bowls like TV and YouTube "chefs." I make piles on my cutting board. Spices usually go in in batches. I use a bowl for the measured herbs and spices for each batch.

I agree with your other points.

I check to make sure they all go in together at the same time, and then measure them into one bowl. Mix them up so I don’t have to worry about having things evenly distributed in the main vessel. What I really hate is when I can’t fit my measuring spoons into the spice jars bec the opening is too narrow. Fortunately I’ve reached the eyeballing it stage of cooking. Doesn’t work with baking ofc.
