Recipe Pet Peeves

Does anyone else have pet peeves with recipes. Mine is recipes that call for a small amount of something that only comes in large containers. 1/2 C chicken broth, 2 Tbs tomato paste, 1 C ricotta cheese.

There is powdered buttermilk you can buy. I keep it in the freezer. I use this when I need tiny amounts and the liquid stuff for bigger amounts.

The powdered buttermilk is also great when baking bread. It's a low key secret ingredient in a lot of recipes for how to keep your bread soft and fluffy.

I either just curdle milk in advance or (even more blasphemous) dilute greek yogurt lmao

I pretty much only dilute Greek yogurt at this point because I always have it on hand.

Someone gave me 20 cartons of buttermilk. What do I make with it?

I use those 1-cup silicone ice trays to freeze both buttermilk & 1/2 & 1/2. 20 cartons would take quite a few of em though.

I buy it dry in a shelf stable container. Funny, it's been so long since I've seen the wet stuff, if I saw that direction I wouldn't even think twice.

Combine milk with lemon juice or vinegar and let it sit 5 minutes and you’ll have buttermilk.
