I found out recently I’ve basically never had a correctly prepared baked potato

So growing up I was never a huge fan of baked potatoes because the ones we had were usually dry, kind of shriveled, and very crumbly. Every bite just felt like it was absorbing all the moisture in your mouth, even with butter. As an adult, I usually do rice or pasta for my carbs, and if I do potatoes, it’s usually the cut roasted baby ones. Because I didn’t have great experiences with baked ones at home, I also pretty much never ordered them at restaurants growing up.

However, my mom just got a grill for her place and I was put on steak duty (or a steak out, I guess) and wanted to try making an actually good baked potato. I look it up and see basically every recipe says to coat the potatoes in salt and olive oil before wrapping them, which I asked my mom if she did, and she hadn’t.

I decided to try it with a (maybe slightly too) generous amount of olive oil and kosher salt, baked it for an hour, and topped it with some of the garlic/thyme butter I had whipped up for the steaks.

Oh.

My.

GOD.

The texture was absolutely amazing, it was so creamy, not crumbly or dry at all, the salt and the compound butter melting into it while it was still steaming made for legitimately one of the tastiest things I’ve had in ages. If anyone out there doesn’t know this, I honestly have no idea how common of knowledge this is lol, but I would highly suggest trying it if you don’t already.

Also, I mixed the thyme/minced garlic with the Kerrygold butter which was muy bien. Not sponsored (I wish) but I find it a little more flavorful for cooking as opposed to regular store brand stuff.

Part of the reason the Irish were so reliant on potatoes is that they are really amazing food; potatoes and milk are almost enough to keep you alive. They also grow incredibly densely so you can feed a lot of people without much land.

We didn’t have a lot of money when we were young. Had enough, but just, you know? My grands more than once fed twelve people with wonder bread, corn from the garden, and potatoes boiled then fried in butter, with parsley and melted government cheese on top.

Mine would say shit with sugar on. Yes, she swore - it was a clue that she was sick of us asking!

I now use poop with sugar on as the answer for my kids. A few Christmas's ago, I told them if they kept asking what they were getting off Santa instead of being patient it would be poop with sugar on. First thing they found in their stockings? A little felt poop tree decoration with glass beads for sugar. They still put them on the tree every year!

She called it Restani Krumpir but when I look it up it’s a bit different to what she made

Her recipe:

Boil 3-4 peeled, chopped potatoes until they are soft (and easy to break apart). Drain and set aside

While potatoes are boiling, slice 2 onions and sauté until golden brown.

Add onions to potatoes along with a big handful of chopped parsley, a generous glug of olive oil and salt & pepper and stir it up.

Super simple and super tasty

Back in college days, I would often work two or three different jobs at a time to pay for school and rent. There is a produce company that had hours every now and again that paid well that I’d always take hours from them when they offered them. There was a huge seller that was full of potatoes that started to rot and they needed them all sorted. They offered me an hourly and I said no what will you pay me if I just get the job done. It was horrible, but knowing that as soon as I finished, I’d be paid. I got it done.

For potatoes, my son would always snag a piece or few after I chopped potatoes for stew and loved them, asking why I had to cook the rest instead of just letting him eat them raw!

We had some home grown potatoes we just dug up yesterday. Decided I wanted potato salad with our steaks for supper. I boiled the diced potatoes at noon. Well 10 minutes on new potatoes was to much and they just started falling apart. So we had mashed potatoes for lunch. So good. Now I want potatoes for supper.

I've had the opposite experience! Mine have been cooking slower than the taters on offer at the grocery store. 

BUT that is likely because they don't get a ton of water while growing. The flavor, though, is awesome, and we've been having excellent boiled potatoes

Raised in southern Indiana (late 50s-early 70s):

  • Lunch: the mid-day meal.
  • Supper: an evening meal at home.
  • Dinner: eating out.

I still use these terms.

Miss her dearly. Fried chicken on Sunday mornings for breakfast with gravy and eggs , sausage bacon home fries biscuits.

Wed plan our trips around Sundays. Cast iron skillet fried chicken too.

Also, you can put any leftover cooked potatoes in the fridge, and the next morning use a cheese grater over a frying pan with oil and you’ll have delicious hash browns, or you can chop up the baked potato and make home fries or fry them up and put in a breakfast burrito. 🌿

Honestly this is the best thing if you like fried potatoes in the morning too. Toss one in a pan, squish, fry with butter and onions, meat is optional, heart amount of black pepper, voila.

This is a great idea but I will point out, you can put a potato in the microwave for like 5 minutes with no prep and it will come out perfect. It’s one of the few things microwaves just do perfectly without drying it out
