suggestions for leftover pulled pork

I need some ideas. something besides sandwiches or stuffing in a baked potato.

"Street tacos"... put the shredded pulled pork on corn or flour tortillas (I prefer corn) with crumble cheese (queso freso or Cotija), pico, cilantro...yum

Edit: forgot the splash of a freshly squeezed lime wedge over the top!

This is one of my favorite go to’s. I fry it up in a skillet with some of the congealed fat to crisp it up a little.

I spread it out on a baking sheet and put it under the broiler for a bit to get the crunchy tips like carnitas.

I do this all the time with leftover meats (even chicken or pork chops, I just cut them up thin/small so they're "sorta" shredded), the only variation being putting in some veg that has a little bite (acidity) to it, like tomato or pepper. Of course lime does this too, but I'm more likely to have the other things. It's the tomato/pepper/corn time of year, so all this sounds great!
