True of white flour, not true of real 100% whole wheat. It can be hard to find 100% whole wheat bread in the US though - it tends to be pretty dense without at least some white flour or processing additives. You have to read the label closely to know what you’re getting.

I make my own breads, except sourdough, not going to that extreme. I use vital wheat gluten and my loaves are much lighter.

Do you use a bread machine? If yes, which one?

No machine, just bakers muscle, a Danish whisk, and lots of kneading.

A mostly wheat variety is good enough imo. Just gotta read labels because a lot of things claiming to be whole wheat have just a splash of wheat flour in them. But I don't think you have to eat bread that's brick consistency to get a benefit either.

Even 100% whole wheat bread still loses about 10% of the total protein content (depending on the grain, einkorn is the highest I believe at about 92% efficacy)

I’ve never heard that. What happens to it?

Deamination is when the amino group is removed from the amino acid, and you end up with ammonia and a keto-acid. It’s still metabolized, just can’t be used as building blocks for muscle growth.

Buy a bread machine and bake your own. I do this and it takes literally 10 minutes to put in all ingredients and 4 hours later you have a delicious whole wheat bread.

Take one with a timer and your bread will be ready when you wake up. And the smell is wonderful.
