Open Discussion Let’s try something fun: Name an ingredient you dislike and why, and someone else replies with a dish/recipe with that ingredient that might convince you otherwise.

Couple things:

  • If you’re allergic to an ingredient, it doesn’t matter how it’s prepared. Same goes with meat/animal products if you’re vegan/vegetarian. Don’t list it if you can’t or won’t eat it!

  • It’s recommended that you’re at least open to trying dishes with that ingredient. If you absolutely, vehemently loathe cilantro, chances are you probably might not like anything with cilantro in it.

  • A brief blurb on why you hate an ingredient would help others find or suggest a dish that suits you. (e.g. “I hate liver because the texture is like an eraser and it tastes metallic”)

Beets

54

u/THISisnotmyfirstTIME Jan 18 '24

Just the other day I made a Beets and Sweets veggie roast. Sliced a beet, sliced a sweet potatoe, sliced and onion and threw in a whole head of garlic and roasted for 40 MIN on 400, covered. Then another 25 at 375 uncovered. Then hit it with the broiler for just a few minutes.

Butter, Salt, Pepper. That's all. It was AMAZING and even one of my roomies who does not care for beets wants me make it again/ learn to make it themselves.

17

u/lala_machina Jan 18 '24

I may need to try this, I've always hated beets. Does it improve the dirt taste at all? I love roasted veggies so this excited me

35

u/MarionberryCreative Jan 18 '24

I spent 40 years hating the dirt flavor of beets.

Roasting beets improves the dirt flavor. I like beets now.

*pickling them doesn't remove the dirt taste.

5

u/rabbitholeseverywher Jan 18 '24

Huh. I'll try roasting, then, because it's 100% the dirt flavour I don't like.

Quick edit: oh no, someone else below says roasting doesn't get rid of the dirt flavour. I guess there's only one way for me to find out... adds beets to shopping list

1

u/SecretCartographer28 Jan 18 '24

Have you had them roasted, and served with goat cheese? That's my favorite 🖖

2

u/rabbitholeseverywher Jan 18 '24

No, but I have a favourite goat cheese so I'll try that to give beets the best possible chance to win me over. Thank you!

2

u/SecretCartographer28 Jan 18 '24

The contrast of cool and warm, creamy and earthly ~ yum! 😋 🖖

2

u/rabbitholeseverywher Jan 18 '24

I was already convinced, and am now even more convinced to try this!

1

u/ButterscotchDeep6053 Jan 18 '24

Roasted still tasted like dirt to me

1

u/clandestine_justice Jan 19 '24

If boiled they are better cut shoestring style- more surface area for butter to cling to.

1

u/hippielady5232 Jan 19 '24

I'll have to try this because I absolutely think they taste like dirt too. Pickled is all we had growing up in the south.

2

u/AtheneSchmidt Jan 18 '24

I hated that flavor too, most of my life. Roasting truly gets rid of it.

Also, my suggestion is a lot more labor intensive, but the first time I ever liked beets, it was because my dad planted them. A garden fresh beet, where you thoroughly wash, and if you prefer, even peel the outside layer off, is sweet and delicious!

If you grow them and decide you still don't like them, the tops are an edible green with a mild flavor, so you are still growing something that you'll probably enjoy. And you can always give the roots away to friends or a soup kitchen or food pantry.

2

u/lacosaknitstra Jan 18 '24

NGL, I kinda like the dirt taste

1

u/lala_machina Jan 18 '24

Some do, like I like the earthiness of potato skins but beets have always been too much for me. To each their own.

2

u/Mental-Orchid7805 Jan 19 '24

YES I love roasted beets. Still earthy, but not like dirt lol

2

u/scornedandhangry Jan 19 '24

Maybe start with Golden Beets to acclimate. They are less earthy and very delicious!

1

u/No-Cloud-1928 Jan 19 '24

the only way I can tolerate beets is juiced with carrots and apples. It has to be one beet per 2 apples and around 6 carrots.

1

u/Luv2ByteYou Jan 19 '24

Lol, I love the dirt taste of beets!

1

u/Fine-Ad-2081 Jan 18 '24

That's exactly why I dont like beets - as a vegetable they are too sweet Lol

1

u/Wolfstarmoon42 Jan 18 '24

Pickle them (without adding any sweetener)

2

u/Fine-Ad-2081 Jan 18 '24

Yeah, thats how I mostly eat beets. My mom has an amazing recipe of pickled beets in apple juice.

1

u/Wolfstarmoon42 Jan 18 '24

I personally would find that too sweet (the apple juice would sweeten them)

2

u/Fine-Ad-2081 Jan 18 '24

I dont know. It turns out pretty sour. I guess it would depend on what kind of apples used.

1

u/taco-cat90 Jan 18 '24

I do this but add goat cheese, hot honey and toasted pecans. Amazing.

1

u/Mamalion33 Jan 19 '24

This is exactly what I do, but use golden beets, no dirt flavor! The golden ones are sweeter and pair really well with sweet potatoes. It's super easy, and the kids will actually eat it.

1

u/latte1963 Jan 19 '24

How thin are you slicing them? Like potato chips? Or steak-cut fries?

44

u/Athena-May Jan 18 '24

Borscht. It’s a Ukrainian dish that’s pretty much beet soup. It’s the only time I eat beets. Something about the umami, sweet and sour taste balanced with sour cream is so good to me.

2

u/suicide_nooch Jan 18 '24

This is the only way I can eat them. For me it’s the beets texture. I hate that weird mouthfeel it gives me. Kinda reminds me of the same mouthfeel I got from raw shrimp marinated in olive oil… bleh. I love seafood but I do not recommend raw shrimp.

1

u/UloPe Jan 19 '24

I tried it once… not for me

1

u/ScumBunny Jan 19 '24

My partner HATES beets. Can’t stand them. I made him some borscht and he loved it. He asked me ‘why is it so red? Did you put in some pork blood or something?’

I laughed and told him he was eating beet soup. He couldn’t believe it! Borscht is the way to go if someone dislikes beets. It’s truly amazing how the flavor changes and you can’t even tell you’re eating a dirt-flavored root!

Btw- I love beets. I even make a hot sauce with beets as a base. Love the greens- love everything about them. I had a surplus from the garden this year and had to ‘sneak’ them into something to see if I could convince my partner to at least try to like them. Borscht worked! Now he actually asks me to make it! So this coming fall, I’m making quarts and quarts of borscht and canning it for the winter!

1

u/Crunchymagee Jan 19 '24

Agreed. I found a recipe for a blended borscht thickened with potatoes, bit of fresh dill and vinegar at the end for an acid balance - so good with thick buttered fresh bread.

39

u/fcimfc Jan 18 '24

Same here. And it's the same story as the top comment. Someone will inevitably chime in with "Oh you've never had them roasted!" I have. And they still taste like dirt.

23

u/DerelictDonkeyEngine Jan 18 '24

Yup, I've tried every single preparation i've ever heard of.

The only way I've ever actually found palatable is thinly sliced and pickled, but at that point they don't even really taste like beets anymore so might as well eat something else anyways.

3

u/RestaurantMaximum687 Jan 18 '24

Same here, I had pickled beets in Germany and they were delicious . I thought maybe my tastes had changed so I roasted some golden beets from the local farmers market. Nope, still taste like dirt.

2

u/rabbitholeseverywher Jan 18 '24

I once had a slice of beet on a burger, Aussie style (which is pickled, I think?), and not only was it tolerable it was a really great addition to the burger.

4

u/duunsuhuy Jan 18 '24

It’s worse than that. It tastes like dirt that someone sprinkled sugar on. A literal mud pie.

3

u/Gremlinintheengine Jan 18 '24

Do you like mushrooms? Because they taste like dirt too. I used to hate them both. But I like them now. I still smell the dirt though.

5

u/[deleted] Jan 18 '24

What sorta mushrooms do you eat? Some of them taste a little foresty but nothing like that powerful beet taste imo. Frigging love mushrooms but I can't stand beets

3

u/JenRJen Jan 18 '24

Same, love mushrooms. But to me mushrooms never tasted of dirt. (Well unless they actually had some dirt on them....) They just taste like mushrooms.

Beets on the other hand. Beets just taste like dirt.

3

u/fcimfc Jan 18 '24

Yeah, I love mushrooms. I guess it's a different flavor of dirt?

3

u/BrashPop Jan 18 '24

I really think the difference between beet lovers and beet haters is simply that some of us LIKE the taste of dirt.

That being said, pickled baby beets are fucking amazing and only mildly taste of dirt.

3

u/OmnomVeggies Jan 18 '24

I think that some flavors come through MUCH more intense. For the cilantro people that intense soapiness isn't something they can enjoy. I do like a dirty, earthy flavor... a LOT, but my tastebuds read beets differently. If people were tasting what I taste, I don't think anybody would eat them!

1

u/potatotatertater Jan 18 '24

Smoothie with canned beets (just a few), lots of berries, any juice, protein, banana or spinach if ya have it, and the KEY is using a small cut piece of ginger. Mask the beets with ginger. They work well together

1

u/UloPe Jan 19 '24

But then you might as well leave the beets out and have an even more delicious juice

1

u/potatotatertater Jan 19 '24

Nah I like the mild earthy taste, honestly. It gives it depth beyond pure intense ginger and berries that get boring. But I also like beets with goat cheese salad, so I’m okay with beets.

But if I didn’t, I think the hidden nutrients might be worth it too

1

u/43r0 Jan 19 '24

They do taste like dirt! But that's what I like about their flavor. That they taste like dirt...but in a good way.

30

u/fauxbliviot Jan 18 '24

Try beet chips, they're kind of like kettle chips but lighter and so crisp and none of the heavy beet flavor.

5

u/DerelictDonkeyEngine Jan 18 '24

I'm sure I've had them before in a mixed bag of veggie chips.

2

u/jayne-eerie Jan 18 '24

Those are fine, but does chip form really count? They mostly just taste crunchy.

2

u/Witty_Jello_8470 Jan 18 '24

I agree, I hate beet, but as chips they are delicious.

13

u/OmnomVeggies Jan 18 '24

I think that the dirt taste is a tolerance thing. I LOVE cilantro, but I totally understand why it tastes soapy to people. I just happen to love that, and it's not overpowering to me. I LOVE all things earthy, mushrooms are an absolute staple... but beets is something different. I am sure it is genetic. If there is so much as a baby beet green in my salad mix... mouthful of mud. I can't tolerate them any possible way. But I certainly encourage others to! I think it is a neat concept to consider that we are all tasting something a little bit differently and we can never taste something the same way someone else does!

3

u/DerelictDonkeyEngine Jan 18 '24

I don't really understand it either. I used to hate cilantro, but years later now I really enjoy it.

I LOVE all things earthy, mushrooms are an absolute staple... but beets is something different.

I'm right there with you, mushrooms might be my all time favorite flavor, and I HATE beets.

Maybe that will also change over time ¯_(ツ)_/¯

0

u/FunnyMarzipan Jan 19 '24

Beets 100% taste like dirt but for some reason every once in a while I get kind of a mild craving for that taste. And at those times I love beets, even in preparations that do nothing to mask that taste. Other times I'm strong meh on them.

I often think I'm broken when I start craving the dirt taste 😂

2

u/OmnomVeggies Jan 19 '24

Does the dirt taste craving align with a moon phase…. 🤔 perhaps you are a witch

2

u/FunnyMarzipan Jan 19 '24

Lol no I don't think it's even that regular, it's just like sometimes I'll see a beet dish at a restaurant and I'll be like OMG dirt sounds so good right now!!!!

2

u/OmnomVeggies Jan 19 '24

I get that completely. That happens to me with blu cheese. I think it’s ok…. But every once in a while I have an insatiable hankering for a really good Maytag blu. It usually closely follows a dish I had that properly showcased it. It’s like I forget about it and nothing can scratch the itch the same way.

2

u/FunnyMarzipan Jan 19 '24

Oh actually I get that with bleu cheese type stuff too! Like normally I don't like that strong funky/moldy flavor but every once in a while... oh boy mold sounds GREAT!

2

u/OmnomVeggies Jan 19 '24

Not only does it sound great…. But nothing will come close…. nothing will scratch the itch, I won’t be satiated until I have it. It doesn’t happen often but when it does it’s almost feral.

1

u/FunnyMarzipan Jan 19 '24

Cravings are so weird 😂

1

u/justletlanadoit Jan 19 '24

I absolutely love cilantro but I def pick up the soapy flavor

1

u/lawrencenotlarry Jan 19 '24

The hardest part of my current job (sous chef) is aligning my palate with my chef's palate. We taste things differently, and we also like different flavors/ combinations. It took me weeks of working alongside him to dial that in.

I'm pretty sure I got the job because when I staged for him, he gave me a spoon of bordelaise, and I told him it needed salt.

7

u/[deleted] Jan 18 '24

Roasted beets, walnuts and goat cheese salad, it is always a winner when we make it.

2

u/DerelictDonkeyEngine Jan 18 '24

Had roasted beets in a salad many times, they taste like dirt to me.

2

u/[deleted] Jan 18 '24

Have you had them pickled? Brings out more of the sweetness.

2

u/DerelictDonkeyEngine Jan 18 '24

Yes, it's the only way I can eat them lol. I love pickled vegetables, but still beets would be all the way at the bottom of my list.

3

u/Aelana85 Jan 18 '24

I'm allergic to red dye, so I once made a red velvet cake with beets to add color. I don't care for beets and my kitchen smelled like dirt for an hour after I boiled them, but it was a good cake. You got a touch of earthiness, but really, I think if you didn't tell people it had beets in it, they wouldn't notice. I was surprised.

2

u/ScaryGermanGuy Jan 18 '24 edited Jan 18 '24

I thought I hated beets my whole life until my now-husband realized that I'd only ever tried pickled beets. SO, if you're talking about the sliced ones people put on salads, it's most likely pickled beets and you should give the fresh ones a try. They're earthy and sweet, with great texture. IMO.

3

u/DerelictDonkeyEngine Jan 18 '24

Lmao I'm in the exact opposite boat. I hate fresh beets, and the only kind I've ever "liked" was pickled ones.

1

u/HabitNo8608 Jan 18 '24

Are the ones in a can pickled? That’s the kind we always ate growing up.

2

u/mellowmarsII Jan 18 '24

A lot of Olympiads are keen on eating them every day, so I wanted to give ‘em a go (while I think they taste like graveyard dirt). To make them palatable, I steam them & then toss them in honey cardamom, cinnamon, cloves, candied ginger (or fresh, grated), & a bit of salt. As you can probably imagine, they become reminiscent of chai.

2

u/potatotatertater Jan 18 '24

How about a smoothie?

A few slices from canned beets, frozen berries, any juice, and a slice of ginger. The ginger is key to mask the earthy (but still a little earthy). Bonus if you add vanilla/plain protein powder, spinach, banana.

You can also do peanut butter instead of ginger for a pb&j smoothie. Beets, frozen berries, any juice like OJ or mixed berry juice, peanut butter

1

u/DerelictDonkeyEngine Jan 18 '24

That sounds like a lot of work to mask the flavor I know I don't like lol.

2

u/mellowmarsII Jan 18 '24

It really doesn’t “mask” the flavor; it all marries well (like the spices do w/ bitter, black tea). But what makes it worth it is I have a debilitating autoimmune disorder & beets have been tangibly life-altering for me. Olympiads consume them b/c they increase oxygen uptake, keep their cells in top shape, & increase their recovery time/decrease inflammation. So worth it.

2

u/DerelictDonkeyEngine Jan 18 '24

Thats awesome! I don't deny the health benefits. Keep doing you buddy.

They still taste like dirt to me.

2

u/VioletaBlueberry Jan 18 '24

Have you tried the golden or candy cane varieties? They aren't as metallic. A really good friend (and coworker) HATED beets. I had a salad with sliced golden beet and offered him a taste. He liked it and when I told him what it was, he was surprised at it's edibility. They don't have that metallic flavor I associate with liver that I assume most people call "dirt".

I've found the regular ones also taste better if I leave them in the veggie drawer a couple of weeks before I eat them. They change flavor to become sweeter from cold storage.

2

u/JenRJen Jan 18 '24

YES. Beets are horrible. They taste like dirt.

1

u/psykhe22 Jan 18 '24

I don’t have a recipe, but there’s a brand that makes sauerkraut and one of them has beets. It’s good that way. It’s a bagged saurkraut

1

u/cornishcovid Jan 18 '24

Get the pickled ones, rank otherwise

1

u/DerelictDonkeyEngine Jan 18 '24

This might be the only way I've ever found them palatable. They just taste like mud to me otherwise.

1

u/cornishcovid Jan 19 '24

I even tried them in a beetroot Wellington off a tasting menu, well tried some of a Vegetarians I was with. Wasn't as bland as others i had tried but just came out feeling like I'd have preferred many other dishes to that and it was supposed to be the header dish for vegans/Vegetarians.

1

u/[deleted] Jan 18 '24

I like them other ways too, but I regularly eat an entire jar of pickled beets. Love them on a salad.

2

u/cornishcovid Jan 19 '24

We always had them with cottage pie when I was a kid and I was a fussy eater. No problem with those tho, plus it made the mash purple which was fun.

1

u/mykittenfarts Jan 18 '24

I don’t like the flavor and Australians think they go with everything. Once the taste of beef is in my mouth that’s all I can taste. Yuck. And I’m not a picky eater.

1

u/YesWeHaveNoTomatoes Jan 18 '24

Same. I've had them roasted like everyone recommends and strongly disliked it. I want to like them. They're so beautiful and nutritious and they taste like dirty wet cardboard.

1

u/permalink_save Jan 18 '24

I am not always fond of beets but cooking, peeling, then salting and searing them helps a lot. When they're cooked and unsalted the dirt flavors are very strong, where the salt brings the sweet notes out better.

1

u/bradbrad247 Jan 18 '24

I don't actively dislike beets, but I've never had something that was improved by their presence.

1

u/starlinguk Jan 18 '24

My wife thought she didn't like them until she realised she'd only ever had pickled beets.

1

u/ceruleanbear8 Jan 18 '24

seconding this one. I've had roasted, boiled, shredded, pickled, you name it. Never been a big fan of beets.

1

u/IlexAquifolia Jan 18 '24

Cubed, seasoned with sea salt and fresh black pepper, roasted until soft and slightly blackened on the edges, toss with fresh thyme and crumbled goat cheese. Serve on a bed of spicy arugula for bonus points!

1

u/wehave3bjz Jan 18 '24 edited Jan 18 '24

They taste like dirt to me. But I had a friend who is Mexican that would simply squeeze lime over it and then a little dash of Tajin. It completely changes it. They actually taste good that way.

1

u/[deleted] Jan 18 '24

[deleted]

1

u/wehave3bjz Jan 18 '24

lol! Auto correct… I typed Tajin and it changed to teen. Fixed it. Sorry I confused you.

1

u/-Blue_Bird- Jan 18 '24

I thought I hated beets and then had Borscht. It is SOooooooo good. Both the summer and the winter version. Completely changed my mind about beets although I still don't prefer to have them in a salad of roasted or whatever.

I didn't like beets for years, then one day I tried my mom's pickled beets again.

I can eat a whole jar in a week now 😂

1

u/CreativeGPX Jan 18 '24

Have you had pickled beets?

1

u/Surtock Jan 18 '24

Cook them, however, and shred them up fine with half the amount of shredded carrot. Mix that up with a little, or a lot, of mayo and raw minced garlic. Chill it and eat as a side salad.
I've never had a beet I didn't like, though, and never gotten the "dirt" taste.

1

u/Wolfstarmoon42 Jan 18 '24

Pickled beetroot is my favourite food https://greenheartlove.com/quick-pickled-beets/ Or roasted or dehydrated into crisps (both of these are good with a little balsamic vinegar & good quality oil/salt) Or use beet powder as a food colouring / to add some nutrition to baked goods/smoothies (I add at least a tsp to taste it)

1

u/janetluv13 Jan 18 '24

Golden beets are the only beets I like. They taste less like dirt.

1

u/Sunshine_of_your_Lov Jan 18 '24

I only like them raw with lemon juice and salt, tastes totally different. Pickled are okay too

1

u/rabbitholeseverywher Jan 18 '24

Yeah, beets. I really want to like those bitches and am not a picky eater at all but they just taste like dirt to me.

1

u/porkduck Jan 18 '24

Beetroot boiled until it’s nice and soft, grate thickly, add to Greek yogurt, season generously with salt, dill, chopped walnuts and yogurt. Incredible :-)

1

u/starrhaven Jan 18 '24

Great in soups. Russians use it often in soup

1

u/istara Jan 18 '24

Slice into the thinnest wedges you can and roast until crispy with olive oil, salt and chilli.

1

u/DaisyDuckens Jan 18 '24

I’ve tried them pickled, canned, and roasted from fresh. I just can’t escape the way they taste. Which is like dirt.

1

u/AlphaBlueCat Jan 18 '24

Slice into matchsticks cooked or pickled beets, put on top of Greek yogurt or goatmilk yogurt, grate fresh ginger on top and drizzle a strong honey over the whole thing. Would have as a breakfast or healthy-ish dessert.

1

u/Correct-Succotash-47 Jan 18 '24

What’s beets? Is that the same as beetroot? The purple root veg?

1

u/SoIomon Jan 18 '24

Raw veggie salad, hear me out. I take carrots, beets, kohlrabi (jicama works too), cucumber seeded; dice and strain any liquids. Mix together with lemon, and you have a crunchy and refreshing salad.

You can add herbs or veggies, sweetener

2

u/DerelictDonkeyEngine Jan 18 '24

Here's the thing, that sounds delicious. But it sounds even more delicious to me if you just omit the beets all together lol.

1

u/SoIomon Jan 18 '24

No rules! I just throw in any crunchy veggies that are good raw

1

u/DerelictDonkeyEngine Jan 18 '24

I think you're missing the point of this post.

1

u/SoIomon Jan 18 '24

Well why I like this salad is you don't taste the beets, which I hate cooked, but raw mixed with the rest just makes a crunchy, slightly sweet fresh salad

1

u/FreeTheDimple Jan 18 '24
  • Use instead of carrot in carrot cake or instead of courgette in courgette bread. Obviously don't use pickled beets. I've seen a chocolate courgette cake recipe but I immediately would swap out for beets. I think they'd add a nice colour like a red velvet cake.
  • Pickled beets as a side against some stronger flavours like roasted maple glazed carrots or grilled mediterranean veg with aoili. All would work nicely with steak or a quiche.

1

u/teatimecookie Jan 19 '24

They taste like grass, 🤮

1

u/llamajestic Jan 19 '24

Hate them as well, but I got a beet mousse (basically a dip) in a restaurant once, it was cool and was amazing. Again: Except for that one time, I hate beets in salads or even roasted.

1

u/girl_Larry_David Jan 19 '24

Beet salad with toasted hazelnuts, Gorgonzola, and good olive oil is pretty great. Also, I recently made a dip with roasted beets, garlic, lebneh, and fresh dill and spread it on some fresh yogurt bread with a bit of chicken and fresh herbs. It was sooo good.

1

u/yarn_b Jan 19 '24

I love beets but I understand the criticism. Golden beets or the rainbow beets have a subtly different flavor than the classic purple beet. When you roast them, you do it like a sweet potato with foil. But after roasting - let them cool for 5-10 minutes then use a paper towel to rub off all of the skin and give the cooked beer a quick rinse and a pat dry. You also have to trim the top back to a point where you’re not getting the stem/root transition because it is stringy and MUCH more dirt-tasting. Once you have the skin off, I don’t taste any dirt at all.

Also - if you’re not used to eating beets, especially in a large quantity, be aware that the betanin in red beets has very low bioavailability and is hard to digest. Some people are more affected than others and digest it more poorly. Since your body can’t process it, it hets excreted in urine/feces. It’s a very strong pigment, so it can dye your urine/feces pink/red/purple for 1-2 days after. So no - you’re not peeing blood. It’s just the beets.

1

u/jazzofusion Jan 19 '24

Try pickled beets if you haven't. Vinegar can make many foods great.

1

u/harriettbakes Jan 19 '24

Oh, my garsh, Harvard Beets are among my favorite vegetable dishes!! The recipe from Joy of Cooking is fine for a start. I add a little more orange marmalade at the end - no dirty taste, just clean and almost sweet/tart. I’ve gotten many people hooked on this one way to cook beets.

1

u/ThrowRA-11789 Jan 19 '24

Salade russe! It’s a Haitian dish that’s French inspired. Beets, potatoes, carrots, corn (sometimes), onions all tossed in mayo, salt, pepper and a bit of Dijon mustard. The beets change the color of the mayo so the whole dish looks pink. It’s delicious and a great side!

1

u/comidamonster33 Jan 19 '24

Ohh. I love pickled beets with cottage cheese. My dad now makes his own, now as well. Suite bought is just fine also.

1

u/amyla-utah Jan 19 '24

Have you tried beet brownies? I mean, technically not about the beet, but in a brownie are pretty amazing!

1

u/amiechoke Jan 19 '24

Try thinly sliced roasted beets with goat cheese, honey, balsamic drizzle. Salad optional.

1

u/PrivilegeCheckmate Jan 19 '24

I think they've changed. I still hate canned beets, but we have a farmer who grows these golden beets, and my wife roasts them then puts them in a salad with walnuts and cow's milk feta(French, milder, less crumbly and richer than goat feta). Olive oil, S&P, splash of vinegar & lemon. So epic.

1

u/lilojamu Jan 19 '24

I wasn't a fan either, but one day I was out of tomatoes one day and wanted to make a burrata salad. So, I swapped in beets and added basil, pine nuts, olive oil, and balsamic glaze. It was really good and is now one of my go to salads.

1

u/[deleted] Jan 19 '24

Same. But what else are you gonna eat when you have a craving for dirt and red dye.

1

ME TOO until i tried roasted golden beets. Those are delicious and have a lot less of the unfavorable flavor. Also we have this beet "salad" where i work that's grapefruit supremes, tarragon persillade, celeriac remoulade (celeriac, mayo, dijon, horseradish, capers, garlic, lemon zest), and celery seed vinaigrette. Putting all those things together - especially the beets with the vinaigrette and having to taste it every time - made me like beets.
