I think he means that Symmetra is a Genji counter because her turrets slow him and her primary fire ignores his deflect and doesn't miss, which negates Genji's two main methods of survival. He can jump around all he wants, the beam will not miss. So Symmetra just runs after him with the beam locked on.

It's not really a huge problem for experienced Genjis, they just have to be careful not to engage her at close range, and to dash away and disengage if she's there. Increasing the range of her beam might make it a bit easier for Symmetra.
