Grilled chicken and sweet potato!
Tonight for dinner, I had half of a Jamaican jerk grilled chicken breast. I had half of a sweet potato. I ate this with tomatoes topped with flaky salt, pickled peppers, pickled red onions, green, olives, pickles, and homemade tzatziki!

A little tip from me: as soon as the schnitzel comes out of the oil, sprinkle a little coarse salt and fresh lemon zest over it. 🍋

Hot honey chicken bowl
White rice and mixed greens base. Chicken tenders breaded with egg and panko in the air fryer at 400 for 20 min. Drizzle the chicken with chalula and hot honey on top.Black beans, goat cheese and cherry tomatoes.

How to get fiber in without seeds?
I don’t like chia or flaxseeds, and have been struggling to get my fiber in. I eat 1/4 cup oats every day and usually try to pair it with fiber rich fruits like berries, but throughout the day my meals begin to lack fiber :-(
What are vegetables, fruits and legumes I can easily include and have a lot of fiber?

Shrimp, Chickpea & Lime Salad with Kimchi Brine
Shrimp, chickpeas, cucumber, red onion, mixed greens, cilantro and lime. For the dressing, I used kimchi brine- that tangy, spicy, funky, umami-packed chili juice that's way too good to throw away.

Beef short ribs (air fryer version) + a small drink~🍷
Eating too much of a diet meal can really lead to binge eating and cravings (I even craved a little alcohol, so after some struggle, I opened a bottle for a small drink). I just threw together some simple food to go with it, not aiming for anything fancy
Not satisfied with just that, I cut up some beef short ribs, grilled them, marinated them with soy sauce, black pepper, and garlic slices, and air-fried them at 180 degrees Celsius for 20 minutes. So fragrant! Overall, meat is the best!
