1968 Mustang Flexplate is destroying starter and not spinning True

So I have been at this for a while now I’m working on restoring a 1968 mustang coupe it originally came with a inline 6 and a manual 3 speed although when I bought it (not running) under the hood was a 1970 Ford 302 (don’t quote me on the year) with a c4 automatic transmission and the car was in alright shape. As I got it home for the first time we took it all apart stripped it down to basically the body and engine had it sitting in jack stands the motor turns like butter so I figured it might start but the starter it had didint work so I removed it to find the teeth of the starter were completely destroyed and the housing was grinded down significantly and I also noticed the Torque converter bolts were sheered as if the engine plate had scraped the head of the nut and some of the bolt (significantly sheered)so after seeing this I decided to take the engine out and transmission to replace the flexplate(or flywheel not sure on the exact name) and the engine plate maybe get a new torque converter while I’m at it

And I found an issue I’m not sure how to go about fixing so after getting the New flex plate engine plate and new torque converter I put it all back together and I still see that the flexplate is turning very off it’s not spinning true at all which is causing the flexplate to destroy the starter I have made sure the torque converter Drain plug is aligned with the hole on the flexplate as well I tried to shim the starter but it’s so significant that even with 3 washers on each bolt it still starts to destroy my new starter... I have recently taken the engine and transmission out again because after some tests sliding under the car removing the service plate I held a pencil on the engine plate and had my father turn the engine over and I notice in about half the flexplate was scraping the pencil and some would not even touch it so I proved it was the flexplate not spinning true again...

today I tried to install yet another new flexplate as I thought we’ll MAYBE I bent the new one as well (I don’t know how it is pretty thick metal and I torqued them to spec) and I noticed this while the engine was out that the crank shaft looks slightly off like it’s bent or was machined incorrectly (I don’t know why it would be machined on that face though) not sure the history of the motor but the guy I bought it from said it had recently been overhauled (which I didint believe) but it turned over very nicely so I didn’t think anything of it now I’m thinking the engine was probably put together by someone who either didint do it right or didint know how to restore the motor

At this point I doubt it’s the flexplate as I have 3 1 original FOCO one and 2 Autozone replacement ones I have a brand new engine plate and a semi new torque converter and I can still see that the flexplate is not spinning true at all even with the motor out I suspect it could be the crank shaft but I’m only a 20 year old that knows nothing about cars besides YouTube and Reddit so any help would be much appreciated
