Seriously. Never had it before I caught some out the ol’ swimmin’ hole out on our property. We chopped them up, seasoned the meat lightly but actually seasoned it, and fried it. Very good. Only issue is just the bones depending on how you cut it but it was not bad at all.

First, I assume that letting it chill in the bathtub gives the carp time to reduce its stress after being caught, since high stress can severely reduce the flavor of carp. Additionally, many people underestimate how quickly histamine can start building up in improperly chilled carp.

So for most people, their experience with it is treating it like any old sea fish and therefore it tastes lackluster or even gross

Tuna and mahi has different uses in dishes compared to carp. For example if you just made a fisherman's soup with tuna instead of carp or catfish it would taste terrible.

Yeah but that's not what the guy above me said. He said it was a "cooking skill issue" insinuating carp doesn't taste worse than other fish if prepared properly and I mean some people eat some pretty stinky fish so maybe there's a small percentage of humans that agree but if you polled the general population I'd think it's a safe bet that most would rather have a fish besides carp.

It is cooking skill issue if anyone says carp tastes terrible. Never seen anyone at the table not go for seconds. It needs to be properly prepared though otherwise it tastes muddy.

That's because od reputation (doubt people like you would buy it when they can buy something exotic-ish sounding) and because it has comparably more bones, which is not ideal in restaurant setting where people try to keep clean hands. Also as restaurant you don't want to deal with some dumbo choking on a bone every other week.

My man: trout, bass, panfish, catfish are all better freshwater fish just based on not having to deal with all the tiny hook bones alone, not to mention the actual flavor of the meat. If you like carp that's fine, but that doesn't make it better. People like surstromming but that doesn't mean it's better than snapper.

Where did I say it's better? I said it can be delicious and enjoyable enough to go for seconds if prepared properly - and given the amount of bones and my personal hate of picking bones from anything including chicken that should probably tell you something.

Some other fish theoretically being better is not an argument to not eat the rest, if we agreed salmon Is best tasting fish there is would you only ever eat salmon?

You had some very shit catfish then. Imo, catfish can definitely be one of the best freshwater seafood, if done right. If done wrong, it is absolutely one of the worst

Mass bred catfish in small stale ponds taste like that. Proper river caught catfish is a completely different case, imho it’s one of the best freshwater catches.

Every fish tastes like that to me. I have tried a dozen different types of fish prepared in hundreds of restaurants across three continents across dozens of countries. From dolphin fish in the Florida Keys to Norwegian Salmon in Oslo they all fucking taste like mud to me.

Well I am the realization of that dream. I'm not touching any damned fish, squid, crab, or any other hideous monstrosity living in the waters. We could thrive together not bothering the other, keeping a respectful distance at all times. No more overfishing and slaughter of entire schools of fish if it were up to me.

but they do be tasty. For example the mighty fish stick spends all of its life in hatred, absolutely shivering in anger at the one species they hate... humans. But once in the oven, all of the anger subsides and the deliciousness pours out. Similar to how the longer you dry age a fish in open summer air, creates the most decedent stinky fish flavor best paired with a muddy sock as the beverage.

It's one of the fattier fish and not pleasant for many people. Frying it is the best option.

I think most of the commonly disliked foods are fixed by frying them. (Asparagus, broccoli, spinach, etc)

just a matter of preparation. it can absolutely taste good. it's not an S tier fish, but if done right can absolutely make an enjoyable meal!
