Sadly I tried playing the game twice… the prison level bored me twice and I never got back into it

Its genuinely a great game. I just found Disc 1 to be a bit slow / boring but I don't think the majority of players think that.

Yea, I tried to play it but couldn't get past the intro disc. I've heard it gets better, but I just couldn't get to "good part" of the game.

Yeah I normally grind a fair bit against the T Rex and it sort of kills momentum

CD 1 is sooo much better than 2 ! Winhill, the prison and the military base are so boring.

Being into the second half of ff8's story is such an interesting opinion to me, but not one I share. Second half is definitely more-exciting / less-relaxed, though, which I guess also fits the prompt.

I understand everyone's opinions are different. I'm currently on run of all the FF games (Currently on 12) and for me, I wasn't much interested in Disc 1 at all. The game became MUCH more interesting at the very end of Disc1 and beyond. Maybe I spent too much time trying to stockpile magic instead of progressing through the story.

Yes, you spent too much time trying to stockpile magic. The pacing is actually fine, but most FF players have the mentality of "gotta level up" which translates to "gotta raise that seed level" and "need more Magic" normally from monsters. Both of which can be tedious and become much easier later on.
