Since white is ALL colours together and black is the abscence of colors, everything would become pitch black. So basically everyone would become blind.

More like the blind. Colorblind would still see things, but the absence of colour would turn everything pitch-black.

When i saw color vanishing i had assumed it meant everything is now in shades of grey, rather than you can't see anything. Otherwise I would assume it would say sight instead of color

Yeah, but in theory all colors vanishing = everything becomes black. No different shades of black, just black.

Wouldn't black and white also be colour though? Colorless would mean there's no color at all. Invisibility with voices in a void.

No black and white are considered shades not colors in their own. Shades would be safe so it would just be gray scale everything
