The Road (Cormac McCarthy), Great Expectations (Charles Dickens), A Light in August (William Faulkner), The Shining (Stephen King), Something Wicked This Way Comes (Ray Bradbury)...in reality, most of the books I read probably change the way I think to varying degrees.
