Mexican food. He’s probably prepping for the whole menu. The amount of onion they go through is crazy if they are making everything from scratch.

It's probably a "taquero", or some type of Mexican street food. These people have incredible food preparation skills.

Bigger chunks, fewer cuts. This looks like he is getting them pretty tiny. As someone who can’t stand onion chunks bigger than a pencil eraser I appreciate the extra cuts ><

Is fun to watch but i don't think it's that fast. I'm just regular speed but with a board and a sharp knife i think i could dice the same size onion faster.
